After accidentally creating my creamy tahini lentil dip from a batch of overcooked lentils, I’ve started looking at kitchen mishaps a little differently. Step-by-Step Instructions
STEP 1: Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper for easier cleanup. I use this Meatloaf Pan with Draining Insert.
STEP 2: Sauté the vegetables

Heat olive oil in a skillet over medium heat. Add the grated onion, zucchini, and carrots, and cook until softened and most of the moisture has evaporated. Stir in the garlic and cook for another minute. Remove from heat and let cool slightly.
STEP 3: Mix & shape the meatloaf

Add the remaining ingredients into a large bowl. Add the cooled vegetable mixture and gently mix until everything is just combined. Transfer the mixture into the prepared loaf pan and shape it into an even loaf, pressing lightly to hold it together without packing it too tightly.
STEP 4: Make the glaze and bake

In a small bowl, mix together all the glaze ingredients. Spread the glaze evenly over the top of the meatloaf. Bake for 50–60 minutes.
STEP 5: Rest and serve

Let the meatloaf rest for 10 minutes before slicing. This helps it hold together and keeps it juicy. Serve warm with your favorite sides!

- Slightly overcooked quinoa is actually ideal here because it helps bind the meatloaf and keeps it tender. If your quinoa is very wet, let it cool first so it doesn’t make the mixture too loose.
- Cook off the vegetable moisture. This prevents excess water from making the meatloaf soggy.
- Let the vegetables cool slightly. Adding hot vegetables straight into the meat can affect the texture and make the mixture harder to combine evenly.
- Mix everything until just combined. Overmixing can make the meatloaf dense instead of tender.
- Shape it gently. Press the mixture together just enough to hold its shape. Packing it too tightly can make the meatloaf heavy.

- 3 garlic cloves minced

- 1 large egg
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon dried parsley flakes
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
For the glaze
- ⅓ cup ketchup
- 1 tablespoon maple syrup or honey
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
