This recipe came together completely by accident. Though I definitely don’t recommend getting distracted the way I did, it turned out to be a happy kitchen surprise. I was cooking lentils for a salad, following my usual method: bringing them to a boil, reducing them to a simmer, and letting them cook. But life got in the way, I got preoccupied, took the dog for a walk, and about 40 minutes later, I suddenly remembered I had lentils on the stove. Thankfully, there was still enough water left in the pot and nothing burned, but the lentils had gone far beyond tender and were starting to turn mushy. And that’s how both this creamy lentil dip and my Don’t Throw It Away category were born.
