This chicken salad with leftover chicken is one of the easiest ways to rescue dry or overcooked chicken, transforming it into a fresh, flavorful meal with avocado, chickpeas, olives, capers, and a bright lemon dressing.

This recipe came together after one of those nights when the chicken looked perfectly cooked on the outside, but turned out dry and overdone when sliced. Chicken breasts are definitely easy to make dry. Instead of tossing it, I shredded it with a fork and started building around what would bring it back to life: creamy avocado, soft chickpeas, briny olives, capers, and a bright lemon dressing. Ever since accidentally turning overcooked lentils into my creamy tahini lentil dip and soft quinoa into Juicy Quinoa Zucchini Meatloaf, I’ve started looking at kitchen mishaps a little differently. Some of the best meals come from working with what you already have. Just like the recipes in my Don't Throw It Away series.

What to do with dry chicken
Dry chicken doesn’t always need to be reheated or covered in sauce to make it taste better. Sometimes the best fix is to transform it completely.
By shredding dry or overcooked chicken into thin pieces and tossing it with creamy avocado, soft chickpeas, juicy and crunchy cucumber, briny olives, capers, and a bright lemon dressing, the texture changes completely. Instead of tasting tough or chewy, the chicken absorbs moisture and flavor, making it feel fresh and intentional again.
Why This Chicken Salad Works for Dry or Overcooked Chicken
- A smart way to use dry chicken: Instead of forcing yourself to eat dry, overcooked chicken as-is, this recipe, like my Mediterranean Chicken Salad with Crispy Halloumi recipe, gives it a second life by shredding it and "soaking" it in a bright lemon dressing.
- Designed to bring moisture back: Creamy avocado, olive oil, and soft chickpeas help soften the texture and make dry chicken feel much more enjoyable.
- Packed with fresh Mediterranean flavor: Briny olives, capers, fresh herbs, and lemon keep every bite bright, fresh, and balanced.
- Great for meal prep: Since there are no watery tomatoes or leafy greens, it stores well and tastes even better after sitting.
- Family-friendly and practical: Like my Chicken Macaroni Salad Recipe, the ingredients are simple, the prep is easy easy prep, and it's a smart way to reduce food waste.
Ingredients

- Cooked chicken: Dry or slightly overcooked chicken works best here since it will absorb the dressing and soften as it sits. You can also use canned chicken (I usually buy it in Costco) or rotisserie chicken, like in my Croissant Chicken Salad Sandwich.
- Chickpeas: Add protein, creaminess, and body while helping make the salad more filling and balanced. If you like chickpeas in your dishes, you should also try this Chickpea and Crab Salad and these Baked Chicken Thighs with Chickpeas.
- Avocado: One of the key ingredients for bringing moisture back into dry chicken. It adds richness and a soft, creamy texture.
- Cucumber: Adds freshness and crunch, balancing the softer ingredients.
- Red onion: Brings sharpness and bite, which helps brighten the overall flavor.
- Kalamata olives: Add that classic briny Mediterranean flavor and a little saltiness.
- Capers: Small but powerful! These add extra brightness and depth, especially paired with lemon and olive oil.
- Fresh dill: Pairs nicely with the avocado and capers.
- Lemon dressing: A simple mix of olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic, and oregano that helps rehydrate the chicken and tie everything together.
See the recipe card below for the full ingredient list and exact measurements.
Substitutions and Variations
- Chicken Breast: Though this recipe was designed to rescue dry or overcooked chicken breast, it also works well with chicken thighs like in this Chicken Salad with Apples and Cranberries recipe.
- Swap the chickpeas: White beans, butter beans, or lentils work well if that’s what you have on hand, or skip it altogether.
- Make it even creamier: If your chicken is especially dry, add extra avocado or a spoonful of Greek yogurt to the dressing for more moisture.
- Change up the herbs: Cilantro, basil, or mint can also add a fresh twist.
- Add smoked salmon: For a richer, more elevated version, add some diced smoked salmon. It pairs especially well with the capers and lemon.
- Add more crunch: Chopped celery, radishes, or toasted almonds can add extra texture.
- Make it spicy: Add a little bit (to taste) of Calabrian chili paste, harissa, or a drizzle of hot sauce to the dressing for a little heat. If you love buffalo-style flavor, you can also mix in a small amount of buffalo sauce for a tangier, spicier twist.
Step-by-Step Instructions
STEP 1: Flake the chicken

Slice or pull the cooked chicken into thin flakes or shreds. This helps the chicken absorb the dressing better and softens the texture.
STEP 2: Make the dressing

In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, grated garlic, oregano, salt, and black pepper until smooth.
STEP 3: Prep salad ingredients

In a large bowl, combine the flaked chicken, chickpeas, avocado, cucumber, red onion, olives, capers, and fresh dill.
STEP 4: Assemble the salad

Pour the dressing over everything. Gently toss until everything is evenly coated. Let the salad sit for 10 minutes before serving.
Top Tips
- Always flake or slice the chicken into small pieces since thin pieces absorb dressing much better than larger chunks.
- Giving the salad 10-15 minutes to rest helps the chicken soak up the lemon dressing.
- Use fat to your advantage! Ingredients like avocado and olive oil help coat the chicken.
- Don’t skip adding the acid. Lemon juice and red wine vinegar brighten the flavor and help bring dry chicken back to life.
- Start with room-temperature chicken. Cold chicken won’t absorb the dressing as well.
- This salad tastes even better after 20–30 minutes in the fridge, once the flavors have had time to settle.
Frequently Asked Questions
Serving suggestions
This chicken salad is versatile enough for lunch, dinner, or meal prep. Here are a few easy ways to serve it:
- On its own: Serve it straight from the bowl.
- In lettuce cups: Sort of like my Leftover Chicken Lettuce Wraps with Beet & Cabbage Slaw, you can spoon the chicken salad into crisp romaine or butter lettuce for a fresh low-carb option.
- Stuffed into pita: Tuck it into warm pita bread.
- Over grains: Serve it over quinoa, brown rice, couscous, or farro for a heartier bowl.
- On toasted sourdough: Pile it onto crusty bread.
- With crackers or cucumber slices: A great snack-style option or light appetizer.
Storage and meal prep tips
- Store the salad in an airtight container in the fridge for up to 3 days.
- Best enjoyed within 24 hours for the freshest texture, especially if using avocado.
- If meal prepping ahead, add the avocado later to prevent browning and keep the texture fresh.
- Give it a quick toss before serving since the dressing may settle at the bottom.
- Do not freeze. The avocado and fresh vegetables won’t hold their texture well after thawing.

Ingredients
For the salad
- 3 cups cooked chicken breast flaked or diced
- 1 can (15 oz.) chickpeas drained and rinsed
- ½ English cucumber diced
- ¼ red onion thinly sliced
- 1 large avocado diced
- ⅓ cup kalamata olives sliced
- 2 tablespoons capers
- 2 tablespoons fresh dill chopped
For the dressing
- ⅓ cup extra virgin olive oil
- 3 tablespoons fresh lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic minced
- 1 teaspoon dried oregano
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
Instructions
- Using two forks, gently pull the cooked chicken breast into thin flakes or shreds. You can also dice it into small pieces. This helps the chicken absorb the dressing better and makes it softer.3 cups cooked chicken breast

- Pour the dressing over the salad and, using two large spoons, gently toss everything together until the ingredients are evenly coated with the dressing.
- Allow the salad to rest for 10 minutes before serving. This gives the chicken time to absorb the dressing and allows the flavors to meld together.
Notes
- Make it ahead: This salad can be prepared a day in advance, but for the freshest texture, add the avocado just before serving.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. The avocado may brown slightly, but a squeeze of lemon juice helps slow oxidation.
