Funny enough, this recipe idea came to me in the most unexpected way! I was working on a post about different types of lentils and how to use them in your cooking when I decided to take a break and watch an episode of Real Housewives of Beverly Hills (my guilty pleasure, not afraid to admit that I’m a reality TV enthusiast! 😆). In that episode, they were having a lavish black caviar party, and it suddenly hit me - beluga lentils look just like caviar! I couldn’t resist the idea of turning them into a fun April Fool’s Day prank, and here we are!
I have to admit, the first time I tried this trick, I couldn’t stop laughing! From a distance, these little black lentils truly look like the real deal. But up close? Well, let's just say they won’t fool a caviar connoisseur. The texture is firmer, and they don’t have that same glossy, delicate pop, but that’s part of the fun! They still make for a funny twist.

Black lentils are also referred to as beluga lentils. The term "beluga" is often used to refer to black lentils because of their small, round shape and black color, which resembles beluga caviar.

Preparation
STEP 1: Cook the lentils
Bring water to a boil in a small saucepan. Add rinsed lentils and season with salt. Reduce heat and simmer for 15-20 minutes, or until lentils are tender but still firm (they should not be mushy). Drain any excess water and transfer the lentils to a bowl.
STEP 2: Make the "caviar"
Once the lentils have cooled down a bit, stir in soy sauce, nori flakes, honey, olive oil, and lemon juice. Mix well and let sit for at least 10 minutes to absorb the flavors.
STEP 3: Start assembling
While the lentils absorb the flavors of the dressing, spread a generous layer of crème fraîche over the sliced, and optionally toasted, baguette slices.
STEP 4: Add the "caviar"

Spoon about 1 teaspoon of the "caviar" lentils over the crème fraîche. Optionally drizzle with a tiny bit of lemon juice and garnish with chopped chives or dill.

- Don’t overcook the lentils. You want them tender but firm, so they hold their shape and mimic real caviar. If they get mushy, they won’t have the same effect!
- The longer the lentils soak in the marinade, the better they’ll absorb the briny, umami flavors of real caviar. Aim for at least 10 minutes, but up to 30 minutes is even better.
- If you want a neater, more elegant presentation, pipe the crème fraîche onto the baguette slices.

- 1/2 teaspoon salt
- 1 tablespoon soy sauce or coconut aminos for gluten-free

- 1 teaspoon lemon juice
- 1 teaspoon honey for slight stickiness & subtle sweetness
- 1 tablespoon olive oil adds sheen & richness
- 20 slices baguette
- 1 cup crème fraîche use vegan for dairy-free
- dill for garnish
Instructions
