What a fun way to fool your loved ones! This April Fools Rice Krispies Treats recipe is so fun to make, but what’s even more fun are the surprised expressions on people’s faces. The shock!
I definitely surprised and fooled my kids the other day. Boy was my daughter mad that I was giving her avocado for dessert. Not only does she get a vegetable, but she also gets one that she hates, with passion.
Here’s our April Fools Story:
So, I make Rice Krispies Treats and place them on our dinner table as dessert. They look great! With sprinkles and all. But I disappoint my kids and tell them that this dessert is only “for me and papa”. Then I proceed to bring out two avocados. “These are for you,” I say.
My son looks at it in dismay and doesn’t know exactly how to react. But then all our attention moves to my daughter when she moves the avocado with the back of her hand to the other end of the table, in such disgust too. You would think we gave her something horrifying. And this is when I take my son’s avocado and open it. Both kids’ eyes open wide. My daughter runs to the end of the table to grab her “avocado” and takes it out of the shell. It’s a large oval rice krispies treat! With sprinkles and all!
I know, I know, I am mean. But we shared so many laughs. Such great bonding time at the dessert table.

For this April Fools Rice Krispies Treats you will need:
- 2 avocados – or 1 avocado per 1 person to be fooled 🙂
- 1 tablespoon neutral-tasting oil (such as vegetable or canola oil) or nonstick spray – I used Pam
- 6 tablespoons of salted butter
- 400 grams mini marshmallows
- 1 teaspoon pure vanilla extract
- 6 cups of crispy rice cereal – I used Kellog’s® Rice Krispies
- 1/4 cup each – sprinkles, chocolate chips (optional)
- 1 tablespoon, or to taste Caramel Syrup (optional) to drizzle on top
How Ripe Should the Avocados Be?
For this recipe, the avocados do not need to be fully ripe. But, they should be ripe enough for you to be able to cut them in half and carve out the avocado flesh easily. Choose avocados that feel softer to the touch, when pressed slightly. The avocado should be a darker green color. Bright green and firm avocados are not ready to be cut.
It takes a few days for a firm avocado to ripen. If the store sells only firm avocados and you have a few days before making the recipe, place the avocados in a brown paper bag with an apple inside and store at room temperature until ripe, approximately 2 days.
How to make April Fools Rice Krispies Treats:
- Prepare the avocados: See recipe card for full instructions. Cut avocados in half, lengthwise, around the pit. Open the two halves. Using a tablespoon, scoop the avocado flesh out of the shell by gently carving out the avocado from the sides of the shell.
- Line a baking pan with parchment paper (the larger the pan, the thinner the treats) and spray with a little nonstick spray or grease with a little oil.
- In a very large pot, melt butter over medium heat. Add the marshmallows and stir until they have fully melted.
- Remove pot from heat and stir in the vanilla extract.
- Add the crispy rice cereal and stir well, making sure the cereal is well coated with the melted marshmallow mixture. Stir in half of the sprinkles (optional).
- Using damp hands so the mixture doesn’t stick to your hands and fingers, scoop a little mixture and fill each half of the avocado shell. Do not pat down, but gently shape to the size of the avocado shell. Do not cover with the top half of the avocado shell until the mixture has set at room temperature for at least one hour.
- Using a spatula (preferably rubber spatula), transfer the remainder of the mixture to the prepared pan and evenly spread the mixture around the pan. Do not press down, but gently pat the mixture as you spread it.
- Top with the remaining sprinkles, chocolate chips, and caramel syrup. Press on the chocolate chips gently to allow them to stick to the top of the Krispies mixture. You may mix the sprinkles and chocolate chips and layer on top of the Rice Krispies Treats, or you can top each separately as I did:
- Allow the Rice Krispies Treats to set at room temperature for about one hour (in both, the pan and the avocado shell).
- To serve, transfer the set mixture from the pan to a cutting board and cut into equal squares. The Rice Krispies Treats that have set in the avocado shell can now be covered with the top avocado shell 🙂
What Should I Do With The Avocado Flesh?
Try these avocado salads:
- Dice 1 avocado into small pieces, add 1 diced tomato, 1 diced cucumber, and a handful of diced cilantro. Add a pinch of salt, squeeze half of a lemon or lime, and 2 tablespoons of olive oil. Mix well.
- Dice 1 avocado into small pieces, dice 1 ripe mango into small pieces, slice 1/4 red onion. Add a pinch of salt, squeeze half of a lemon or lime, and 2 tablespoons of olive oil. Mix well.
- Dice 1 avocado into small pieces, add cherry tomatoes (sliced in half lengthwise), 1 can of tuna in olive oil and 1/2 tsp of salt. Mix all ingredients.

Scoop out any remaining avocado and spray with a little nonstick spray or grease with a little oil all around the inside of the empty shell. This will prevent the Rice Krispies mixture from sticking to the inside of the shell. You can prepare these a few days ahead and store them in a container in the refrigerator until ready to use.
- Line a baking pan with parchment paper (the larger the pan, the thinner the treats) and spray with a little nonstick spray or grease with a little oil.
- In a very large pot, melt butter over medium heat. Add the marshmallows and stir until they have fully melted.
- Remove pot from heat and stir in the vanilla extract.
