Fun April Fool’s 'Caviar' Canapés – A Tasty Prank for Your Guests
These Fun April Fool's "Caviar" Canapés are perfect for April Fool’s Day, but they’re also a delicious and unique appetizer that works for any occasion! Made with black lentils that mimic the look of real caviar, this playful dish is sure to impress your guests, whether you're pranking them or serving up something special.
Rinse the black lentils in a colander, under cold water. Bring water to a boil in a small saucepan. Add lentils and salt. Reduce heat and simmer for 15-20 minutes, or until lentils are tender but still firm (they should not be mushy).
½ cup black lentils, 1.5 cups water, ½ teaspoon salt
Drain any excess water and transfer to a mixing bowl. Stir in soy sauce, nori flakes, lemon juice, honey, and olive oil. Mix well and let sit for at least 10 minutes to absorb the flavors.
While the "caviar" is absorbing the flavors, lightly toast the baguette slices, spread about 2 teaspoons of crème fraîche on each slice, and spoon a small mound of lentil "caviar" on top.

Garnish with dill.
Notes
Don’t overcook the lentils. You want them tender but firm, so they hold their shape and mimic real caviar. If they get mushy, they won’t have the same effect!
The longer the lentils soak in the marinade, the better they’ll absorb the briny, umami flavors of real caviar. Aim for at least 10 minutes, but up to 30 minutes is even better.
If you want a neater, more elegant presentation, pipe the crème fraîche onto the baguette slices.
Assemble just before serving to prevent e baguette slices from becoming soggy.
A tiny drizzle of truffle oil adds an extra touch of luxury and enhances the umami flavor.
