Why You’ll Love This Recipe
- It’s a true one-pan dinner. Like in this Tender Baked Turkey Breast Recipe, everything cooks together in the same skillet! Minimal cleanup is so convenient. It's perfect for busy weeknights.
- Ready in just 30 minutes. With only about 10 minutes of hands-on time, this meal comes together in just about 30 minutes total.
- Healthy and balanced. Buckwheat is naturally gluten-free and nutrient-dense, and paired with lean ground turkey, veggies, and simple seasonings, it makes a wholesome, protein-rich dinner.
- Budget-friendly ingredients. This recipe uses pantry staples like buckwheat, tomato paste, and everyday vegetables.
- Customizable. Easily switch up the protein, add veggies, or adjust seasonings to fit your taste or whatever you have on hand.
- Great for meal prep. Leftovers store and reheat nicely.
- Comforting yet light. Like my fall recipes, the flavors are cozy and satisfying. The buckwheat and turkey do not feel too heavy.
Ingredients

- Onion: Diced onion adds natural sweetness, aroma, and depth to the skillet. Yellow onion works best, but white or red onion can be used too.
- Garlic: Fresh garlic is ideal; it infuses the dish with savory, aromatic flavor. If you’re in a rush, jarred minced garlic works well too.
- Carrot: Grated or finely diced carrot adds subtle sweetness, color, and extra nutrients. It softens quickly, which is perfect for a 30-minute dinner.
- Ground Turkey: It's lean, mild, and high-protein. Absorbs seasonings well and keeps the dish light. If you enjoy dishes with ground turkey, you should also try my Swiss Chard Rolls Recipe.
- Tomato Paste: Adds richness, umami, and a touch of tang. Tomato paste also helps thicken the skillet and gives the buckwheat a warm, hearty color.
- Buckwheat (kasha): Whole buckwheat groats are nutty in flavor. Rinsing the buckwheat removes bitterness and helps it cook up fluffy. Here's more on How to Cook Buckwheat on the Stove.
- Water: Keeps the recipe simple and lets the natural flavors shine. As the meat, vegetables, and tomato paste simmer, they create their own light broth. This is similar to how using water instead of stock works in my Simple Seafood Soup Recipe.
See the recipe card below for the full ingredient list and exact measurements.
Substitutions and Variations
- Ground Turkey: You can also use a mix of ground turkey and beef for a richer flavor, or turkey and chicken for a lighter option.
- Water: You can substitute chicken or vegetable broth. But remember to use less salt if you're using salted broth.
- Tomato Paste: You can also use tomato sauce (¼ cup), crushed tomatoes (¼ cup), ketchup (1 tbsp.), or even marinara sauce (about 3 tbsp.), as I do in this One-Pan Braised Indian Eggplant in Spiced Marinara recipe.
- Add-In Veggies: Mushrooms, frozen peas, diced bell peppers, zucchini, or spinach would all work great.
Step-by-Step Instructions
STEP 1: Sauté the vegetables

In a large deep skillet, heat olive oil over medium heat. Add the diced onion and carrot. Cook until softened, then add garlic and cook for another 30 seconds.
STEP 2: Brown the meat and season

Add ground turkey to the skillet, break it apart with a spatula, and stir in salt, pepper, paprika, and tomato paste. Cook until lightly browned.
STEP 3: Add buckwheat

Pour in the rinsed buckwheat and stir until it is coated in the tomato-meat mixture.
STEP 4: Cook

Add water, stir, and bring to a simmer, then reduce heat to low. Cover the skillet and cook until the buckwheat has absorbed all the liquid. Fluff with a fork. Taste and adjust salt.
Top Tips
- Make sure to rinse buckwheat to remove bitterness.
- Stirring the buckwheat with the meat for 1-2 minutes adds a deeper, nuttier flavor.
- Add ¼ cup extra water if you prefer softer buckwheat.
- Season as you go. Salt the meat while browning, then taste at the end and adjust before serving.
- Don’t stir while the buckwheat cooks! This keeps the texture light and fluffy.
Frequently Asked Questions
Ground turkey pairs nicely with parsley, dill, thyme, oregano, and basil.
For this recipe, dill would add that Eastern European flavor, and parsley would keep it fresh and versatile. If you want a cozy, savory note, try thyme or oregano.
Buckwheat is delicious in one-pan skillets, grain bowls, salads, soups, and as a side dish. It’s especially good when cooked with vegetables or aromatics, just like in this recipe. Buckwheat can also be used as a base for protein bowls, in breakfast porridge, or as a substitute for rice or quinoa.
Yes, but a skillet gives faster, more even cooking for a 30-minute meal.
Serving suggestions
Pair this skillet with a quick cucumber-tomato salad, a simple coleslaw, such as this Red Cabbage and Mango Slaw or the coleslaw I use in my Beef and Popcorn Shrimp Tacos. Drizzle my Avocado Lime Ranch Dressing on top, or use a dollop of Greek Tzatziki Salad Dressing. A side of quick-pickled veggies is another healthy and filling option.
