Cut the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.

Blend on high until smooth and silky. For a thinner consistency, add more kefir a tablespoon at a time.
Taste and adjust. Add more lime juice or salt to balance the flavor. Chill 10-15 minutes before serving.
Notes
Make sure to use a ripe avocado. It should yield slightly when pressed. This ensures your dressing turns out smooth and naturally creamy.
