These baked, not fried, Beer-Battered Onion Rings are sooooo crispy! Soooo tasty! They are perfect as an appetizer for Father's Day or a Super Bowl party! They are so good alongside a burger, or as a burger topping!
Preheat oven to 425 degrees Fahrenheit, line a baking sheet (or two baking sheets if necessary) with parchment paper and drizzle about 1 tablespoon of vegetable oil on the parchment paper.
Slice the onions crosswise into 1/2 inch slices and separate each ring. Place the onion rings in a bowl of ice water and let soak for approximately 20 minutes, or longer if time permits.
Meanwhile, in a large bowl combine 1 cup of flour, 1/2 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/4 teaspoon ground black pepper, 1/2 teaspoon salt, and 1 teaspoon dried parsley flakes. Stir in 1 cup of beer to create the beer batter.
Add the remaining 1 cup of flour to a separate small bowl and set aside.
Add 2 cups of panko bread to a separate bowl and set aside.
Remove 3 to 4 onion rings from the water and dip into the bowl with flour. Dip the rings in the beer batter, coating well on all sides. Transfer to the bowl with the panko bread until well coated.
Transfer the prepared onion rings on to the greased sheet pan. Repeat with remaining onion rings. Distribute all onion rings in an even layer and drizzle top of the prepared rings with oil.
Bake at 425 degrees Fahrenheit for 10 minutes. Flip onion rings over and bake for another 10 minutes, or until golden brown.
