Preheat oven to 320°F and place a cooling rack on a baking sheet
In a large mixing bowl whisk together the eggs, milk, 1/2 teaspoon cinnamon powder, nutmeg and the vanilla powder.
Melt 1 tablespoon butter in a non-stick skillet over medium-high heat. Once the butter melts, reduce heat to medium.
Whisk the egg mixture well to mix the cinnamon powder and nutmeg that has risen to the top. Dunk (do not submerge) both sides of one slice of bread into the egg mixture. Place the bread in the skillet and repeat with the second slice.
Cook each side until golden (about 1 minute per side) and transfer to the baking sheet.
Add more butter if necessary and cook the remaining bread (2 at a time). Transfer all slices to the rack baking sheet.
Place the baking sheet with the French Toast slices into the oven and bake for 7 - 10 minutes to avoid sogginess and to make the bread a little more crispy.
Meanwhile, prepare the apple cinnamon topping: Slice the apple into thin slices, add 9 grams of vanilla sugar, and 1/2 teaspoon cinnamon powder. Mix well.
Melt 1/2 tablespoon butter over medium heat (in the skillet you used to cook the bread). Add the sliced apples and cook until softened, about 5 minutes.
